Quick & Easy Salad Recipe

I don’t think the words “I love to cook” have ever left my mouth. Thomas, on the other hand, has enjoyed cooking since he was young. He finds it relaxing and loves the challenge of creating something new. I do, however, like whipping up my own healthy meals, as long as they’re quick and easy. I don’t usually use recipes or go out of my way to find crazy ingredients- I like to use whatever is leftover in our fridge or what I can grab at the market around the corner. I’ve been sharing more of what I’ve been making at home on Snapchat, and after getting lots of requests to share the recipes, I thought I would post a few of my favorites on GMG Now. Here is my go-to salad as of lately. My version is plant-based but you could easily add some grilled chicken or shrimp to top it off. It’s super simple and literally takes minutes to whip up.

Salad Ingredients: 

-Mixed Greens

-Cherry Tomatoes

-Red Onion

-Avocado

-Pepitas

-Basil

-Cheddar Cheese

-Lemon

Dressing Ingredients: 

-Olive Oil

-Pink Salt

-Black Pepper

-Seasoning

-Lemon

I serve with some freshly sliced Acme bread.
